Don't throw it away!

One of my favorite things in the world are breads, all kinds of breads. Don't ever even mention the words low carb diet to me. I can give up meat, I can give up sweets and fried foods, I can even give up my beloved beer - but don't ever take my bread away!

I like nice fresh breads. I have my bread machine going every Sunday, but beyond that I'm not much of a baker. In between I usually opt for bakery breads. The only problem with homemade and bakery breads is that they start to get stale so quickly - but don't throw it away!

Make Parmesan Garlic Crisps!

Just slice day old french bread fairly thin, brush both sides with olive oil, sprinkle with minced garlic, Parmesan cheese and Italian seasonings. Bake at 350 until golden and crispy.

These are so good fresh from the oven, great just to snack on all by themselves.

If you really want to get your yummy on make some bruschetta to top them with. There are all different kinds of bruschetta, my favorite is the very basic tomato bruschetta - just combine chopped juicy tomatoes, lots of mined garlic, olive oil, sea salt and fresh ground pepper. Mix and refrigerate until chilled. Spoon mixture over crisps. All together now - YUMMY!

My mouth is watering just thinking about it! It's one of my all time favorites. Give it a try the next time you are getting ready to toss that day old bread. I promise you won't be disappointed! :-)

Home again today

My little guy is still home sick today. Thankfully he's on the mend. He has asthma so even a little common cold usually means missing a couple of days of school for him, and a couple of days of work for me. It's really hard to predict just how severe an illness is with him, it's always a big wait and see game for at least the first 24 - 36 hours. It's been especially scary this year with H1N1 running rampant in our area. Thankfully we've dodged it once again!

Even in times of illness there are priceless precious moments. Give everyone you love a hug today!
