I had to go back to work last week while still a bit sick, and have been trying to get things in post holiday order around here. January is also the time I start my first 12 week training program of the year. It's been slow going this new year, but I'm working on getting into the routines, even if I can't go all out yet.
Anyone who joined me on the 12 week challenge over at AOL back in September ready to go again? Anyone else out here interested in working really hard for two 12 week sessions so you can eat, drink and be merry the rest of the year without the constant "diet" stuff hanging over your head? How many of you have already screwed up on your new year's diet resolutions? Let me know if you want to join us! I'll be glad to post the details.
Other catch up stuff...
Since the beginning of December I've been making my meal plans from what I had in the fridge, freezer and pantry - other than holiday meals and of course fresh fruit, veggies, bread, eggs and milk.
Today I took an inventory of what's still left and found I could still make meals for the rest of this month with just a very few items added here and there. I should be able to get away with about $25-30 a week in groceries for the remainder of the month!
What else would I post now - it's Menu Plan Monday (on Sunday)!
January 11 - 17Sunday - Baby spinach salad, Italian Mac and cheese casserole with spicy sausage
Monday - Crock pot smoked kielbasa, sauerkraut and potatoes
Tuesday - Homemade beef barley soup/stew with homemade biscuits
Wednesday - Leftovers night and/or $5 pizza night
Thursday - Pan fried thin pork chops with stuffing, sweet potatoes, cranberry sauce and green bean casserole
Friday - Caesar salad, Rotelle with meat sauce (from freezer), garlic bread
Saturday - Leftovers night or egg salad sandwiches and chips
January 18 - 24
Sunday - London broil and lobster tails with baked potatoes and lemon butter asparagus
Monday - Fajitas using Sunday's leftover steak
Tuesday - Open faced turkey sandwiches with stuffing, cranberry sauce and green beans
Wednesday - Pan fried ham with scalloped potatoes and broccoli
Thursday - Egg casserole using Wednesday's leftovers
Friday - Homemade pizza night
Saturday - Hot dogs with chips and fresh fruit salad
January 25 - 31
Sunday (Big cooking day) - Large pot of homemade sauce with homemade meatballs and Italian sausage
Dinner - Sausage or meatball parmesan subs
Monday - Caesar salad, spaghetti with meatballs and sausage, garlic bread
Tuesday - Baby greens salad with baked ziti
(freeze remaining sauce, meatballs and sausage)
Wednesday - Homemade minestrone soup (using leftovers) with cheese biscuits
Thursday - Homemade turkey pot pie
Friday - Homemade pizza
Saturday - Italian hot dogs with antipasto

This meal plan is SOOOOOO awesome!! I wish I were HALF as organized! I have some meal plans in my head for the week, but MAN, you are GOOD!!!
I am SOOOOOOOOOOO glad you are feeling better! Having been sick over the holidays myself, I know how you feel! It's taking me quite some time to get over it too....but we will perservere Martha! WE WILL!!

I'm glad you are feeling a bit better, Martha; don't overdo! good for you for getting all your menus planned and organized like this! I was just telling hubby at dinner tonight that we are finally getting a hang of this frugal living/using coupons/looking for bargains that we actually spent less at the grocery store these past few weeks and have lots of food that we could live a couple weeks on what we have in the freezer/pantry; it does work, LOL

So do you marinate your London Broil? We had thee BEST London Broil at a wedding and I haven't been able to get the marinade right. ::sigh:: We have enough food in our freezer to get us through the month too and I'm glad as Dec/Jan are slow months for our business.

I am on a no spending diet, so I am having to get creative with my meals as well!
One thing I bought over the weekend was a pasta maker, so I will be making a lot of pasta and freezing it for some quick meals.

Oh my God, I had NO idea you were sick with pneumonia too. I wish I had been up to blogging. I'm so far behind with my illnesses at the end of Nov and the month of Dec and the past few weeks with Rich's mom. I am finally a believer in my Doc. He said it's going to take me 6 mos to get over this and I believe him. The days leading up to my mother in law's funeral, the planning, the visiting, the going back & forth from here to there...only 25 miles but still draining. So you take care of YOURSELF too. K? Pneumonia is nothing to mess around with. Your Menu looks fantastic. If it weren't my hubby & son, some days no one would get fed. I'm SO glad my sons know how to cook. At least I know they wouldn't starve. Tommy (the one who lives here with the girls) ALWAYS makes it a well rounded meal.My granddaughters eat EVERYTHING. He's such a good dad. Anyway, I'm trying to catch up. Sorry to leave such a long comment. I'm making up for lost time. :)

You know I'm ready but first I have just a bit of Christmas candy to finish off, lol... no seriously, santa got me good chocolates.... and I have the 8lbs to show for it, argh.... one of the great things about going back to work after vacation, all the moving to work my butte.... I have been trying to get back to my 300 crunches a day but hubby got sick and then the boys went back to school and homework and I went back to work....
I'm so glad you are getting back into the swing of things a bit too....

Glad your finally feeling better. I can never get Rick to plan a menu, he has to see what he feels hungry for each day, costs a fortune that way, darn man.
That sick and still russling up menus? I don't do much of that even when I am well. I laugh at baby spinach, because it is my almost constant companion. I eat it all the time. I even had bloodwork come up with iron overload once and they were worried I had a life threatening disease, nope, just too much spinach...:-).
what time is dinner being served? I'll be right over with menu's like that. omg it all sounds delicious. I hope you have a good week, and thank you for following my blog.
