Frittatas would be great for Sunday brunch or a quick anytime meal. It's a great way to use up leftovers and so easy - I'm all about simple, easy and being frugal in the kitchen while still creating wonderful meals! For each frittata whisk together 2 eggs and a splash of milk, add to a small frying pan with a little melted butter or sprayed with cooking spray. Add a small hand full of leftover spaghetti and sprinkle on some leftover veggies, fry on medium until slightly browned on each side and eggs are fully cooked. Eat and enjoy! :-)

That does sound easy and good, and the photo looks appealing. Maybe that's my solution for lunch today...
Yummo! You seem to make the best, most creative dishes. I'd love to try this though I doubt mine will look like yours!
Love,
Nance
Too funny - I'm headed into the kitchen to make brunch and something close to this with last week's left overs! YUMMY
This sounds great. I can even pull it off for lunch today.
That looks good. It's something I'd never think of to make but such a good idea!

You've been a busy girl! But it's all food! Ahhhhh! Bad place for a hungry girl on a diet. :)
This looks absolutely delicious.
I think I do that today - was to a big party last night and do not feel like cooking, MB
What a perfect PPN entry, Martha! Thanks for playing :D It looks delicious!
Frittatas are indeed a perfect "clean the fridge" dish. And pasta is a perfect addition. Thanks for sharing with Presto Pasta Nights.
I love the idea of a pasta frittata...so crisp and yummy!
That sounds like a fantastic idea. I've never made a fritata but it sounds so yummy. I love leftover pasta. Will have to try this. Reminds me of the fried rice dish Tom made the other night. He just made reg. fried rice & threw in some chopped chicken. Complete meal. I think I'd like the frittata, Thanks for sharing, girl.
Hugs, Barb
