I've been slowly but surely recovering from whatever flu or virus I had before Christmas along with the pneumonia which followed. Thanks for the comments and emails of concern, I'm doing much better now!
I had to go back to work last week while still a bit sick, and have been trying to get things in post holiday order around here. January is also the time I start my first 12 week training program of the year. It's been slow going this new year, but I'm working on getting into the routines, even if I can't go all out yet.
Anyone who joined me on the 12 week challenge over at AOL back in September ready to go again? Anyone else out here interested in working really hard for two 12 week sessions so you can eat, drink and be merry the rest of the year without the constant "diet" stuff hanging over your head? How many of you have already screwed up on your new year's diet resolutions? Let me know if you want to join us! I'll be glad to post the details.
Other catch up stuff...
Since the beginning of December I've been making my meal plans from what I had in the fridge, freezer and pantry - other than holiday meals and of course fresh fruit, veggies, bread, eggs and milk.
Today I took an inventory of what's still left and found I could still make meals for the rest of this month with just a very few items added here and there. I should be able to get away with about $25-30 a week in groceries for the remainder of the month!
Sunday - Baby spinach salad, Italian Mac and cheese casserole with spicy sausage Monday - Crock pot smoked kielbasa, sauerkraut and potatoes Tuesday - Homemade beef barley soup/stew with homemade biscuits Wednesday - Leftovers night and/or $5 pizza night Thursday - Pan fried thin pork chops with stuffing, sweet potatoes, cranberry sauce and green bean casserole Friday - Caesar salad, Rotelle with meat sauce (from freezer), garlic bread Saturday - Leftovers night or egg salad sandwiches and chips
January 18 - 24 Sunday - London broil and lobster tails with baked potatoes and lemon butter asparagus Monday - Fajitas using Sunday's leftover steak Tuesday - Open faced turkey sandwiches with stuffing, cranberry sauce and green beans Wednesday - Pan fried ham with scalloped potatoes and broccoli Thursday - Egg casserole using Wednesday's leftovers Friday - Homemade pizza night Saturday - Hot dogs with chips and fresh fruit salad
January 25 - 31 Sunday (Big cooking day) - Large pot of homemade sauce with homemade meatballs and Italian sausage Dinner - Sausage or meatball parmesan subs Monday - Caesar salad, spaghetti with meatballs and sausage, garlic bread Tuesday - Baby greens salad with baked ziti (freeze remaining sauce, meatballs and sausage) Wednesday - Homemade minestrone soup (using leftovers) with cheese biscuits Thursday - Homemade turkey pot pie Friday - Homemade pizza Saturday - Italian hot dogs with antipasto Be sure to leave me a comment if there are any recipes you're interested in - I love to share :-)
