Weekend Reflections


I'm pretty sure I posted this one a while back on a photo challenge, but when I found the almost new Weekend Reflections meme I thought it was worth a re-post.

This is one of my babies - Queen Bella. She is also know as Queenie, Queen Booty, Misfit, The Mrs., Missyfittens, The instigator, Sweet baby and Little fat girl. She has always been our fattest little kitty, yet she is smaller and so much lighter than the others. When she was a baby she was so fat that she couldn't run like the other kitties, she hopped like a bunny instead - Bunny was one of her original nicknames too :-)

TMS


The Motivation Station (TMS) is looking for a host for Fridays that would like to join our great team. We've all been making great progress in the short time since we started TMS just 4 weeks ago!

Our regular hosts Monday through Thursday are ... I originally thought that was enough, I didn't want The Motivation Station to be overwhelming for new participants, but I'm finding that we are all working together and the challenges just kind of continue with a really nice flow and without too much pressure - anyone can jump in and play along at any time!

On Fridays I always feel like we've just kind of left things hanging. When we're working on things, at least for me, I start to lose my motivation without the support - and the weekends are when I need it the most!

We need a Friday host - not looking for organizational experts, we want people who are overwhelmed like we are who want to join a winning support team!

Mellow Yellow Monday

Doesn't that look good? If you'd like to make it yourself try the recipe below compliments of Whole Food Markets (that means it's healthy too!)

Ingredients
  • 1 pint mango sorbet
  • 2 cups mango nectar
  • 2 ripe mangoes, diced
  • Mint sprigs (optional)
  • Lime slices (optional)
Thaw mango sorbet for 10 minutes to soften it a bit, then transfer to blender. Add mango nectar and mangoes and puree until smooth and thick. Pour into glasses, garnish with mint and lime and serve.

Mummy Dogs

I make mummy dogs for dinner every Halloween, along with a nice big pot of chili, a nice big cooler of beer and a nice big cauldron of candy - have to make everyone happy, we don't want any tricks around here! ;-)

Mummy dogs are cute, easy and great for kids to grab and go on their trick-or-treating rounds!

They are just hot dogs wrapped with crescent roll dough and baked at 350 for 15-20 minutes, add little ketchup or mustard faces as they're ready, can't get much easier than that!

Frittatas

Frittatas would be great for Sunday brunch or a quick anytime meal. It's a great way to use up leftovers and so easy - I'm all about simple, easy and being frugal in the kitchen while still creating wonderful meals!

For each frittata whisk together 2 eggs and a splash of milk, add to a small frying pan with a little melted butter or sprayed with cooking spray. Add a small hand full of leftover spaghetti and sprinkle on some leftover veggies, fry on medium until slightly browned on each side and eggs are fully cooked. Eat and enjoy! :-)

Fake it don't make it!

ere's a great "fake it" lasagna recipe. It's perfect for busy people or for people who don't especially like to cook to begin with. It's also a great vegetarian meal and it's so easy!

Ingredients
  • A jar of pasta sauce (or your own)
  • Frozen (thawed in fridge) large cheese ravioli
  • Frozen chopped spinach, thawed and squeezed dry
  • Shredded mozzarella
  • Grated Parmesan
Heat oven to 350° F. Spoon a thin layer of sauce over the bottom of pan. Cover with a single layer of ravioli. Top with half the spinach, a third of the mozzarella, and half of the sauce. Repeat with another layer of ravioli, the remaining spinach, a third of mozzarella and the other half of the sauce. Sprinkle with the Parmesan. Cover with foil and bake for 25 minutes. Uncover, top with remaining mozzarella and bake until bubbly -- 5 to 10 minutes more. Makes 6 servings.

I'm sure you could use some precooked ground beef in place of the spinach if you prefer a meal with meat.
