
Header Challenge!

I was honored when Tom the fishing guy from This is my blog asked me if I'd be interested in participating in the Head Banger's header contest. The team of Head Bangers are Tom (Fishing Guy), Mac, Tom (another Tom), and Darla. Be sure to check out their great blogs and especially their headers today!
Of course I accepted the offer to participate, you know how I love a good challenge! This week's theme is fungus/mushrooms. This one was a little hard for me since there were no mushrooms in nature that I could find anywhere (not that I looked far and wide), don't know if it has anything to do with our recent freeze in Florida, either way I found myself mushroom-less! Naturally I turned to food to photograph.
Here's where I started - The header photo ...

Then sauteing ...

Last but not least ...
Burgers with Swiss cheese, sauteed onions, crispy bacon, all topped off with those delicious sauteed mushrooms - Yum!Just an FYI for those who know I'm on my health and fitness mission - no burger, no cheese and no bacon for me. Mine was sauteed mushrooms and onions on a whole grain panini - believe it or not I actually prefer it that way!
Key-lime Cheesecake Pie

Here's a super easy, no bake, decadent recipe for you - Florida Key-lime Cheesecake pie!
Ingredients
- 1 (8 oz.) pkg. softened cream cheese
- 1 (14 oz.) can of sweetened condensed milk
- 1 (12 oz.) container frozen whipped topping
- 1/2 cup fresh Key-lime juice (about 7-8 Florida Key-limes)
- 1 9 inch graham cracker pie shell
Allow cream cheese to come to room temperature, beat until smooth, add sweetened condensed milk, Key-lime juice and whipped topping, blend until mixture is thick and smooth. Pour into pie shell and chill for at least 3 hours. Garnish with Key-lime slices if desired.
I have to tell you, I'm on my health and fitness mission so only a bite to try it out for me, but this was so good that I really wanted sit down with a fork and eat the whole pie! Delicious!
Note: Bottled Key-lime juice or Persian Key-limes can be substituted for the Florida Key-limes (Persian Key-limes are the green ones usually seen in the produce sections, Florida Key-limes are yellow), I'm pretty sure even regular limes would be fine for this recipe.
BOO! - Review

To start with I think there is some kind of rule about mentioning that I have not been contacted by this company, and have not received any compensation whatsoever for writing this product review - If I had received anything they would probably take it back after hearing what I have to say...

If any of you follow my menu plans you may have noticed that Saturdays are usually hubby or kids cook night. Since I can never get my husband to cook, it's usually the kids. I'm not much into gadgets but the kids love kitchen gadgets to do their cooking. I grabbed one of these slider machines for them on sale at Christmas for about $10. Last Saturday they were ready to give it a try ...
Things were going along ok until they realized it took 3 of these sliders (which were more little tiny bites than sliders) to fill up one little dinner roll. It took well over an hour to make enough burger bites to fill up the three guys in the house.
I mean come on, look at them compared to the size of the fork, a little ridiculous don't you think!
Even worse, see how the lid leans forward in the collage photos? It has a weird little latch that had to be worked several times to finally catch. In the middle of loading in the little burgers at one point it just slammed shut. Thankfully my son had just moved his had a split second before!
On top of it all, the way the surface was made it was absolutely impossible to clean, can't submerge, can't use abrasives, it doesn't open any further than shown in the photos, there was a lip all the way around the bottom, and the little circles that come down over the burgers were too tiny to get anything into to clean them.
After some inappropriate language was mumbled (ok, a lot of inappropriate language), after it cooled, and after I attempted to clean it, I was so frustrated with the thing that I threw it right in the garbage can! The kids cheered!!
I know I should have taken it back, and if I could have cleaned the thing I would have. Maybe I should have taken it back dirty, but I just couldn't bring myself to do that. I think a letter to the company might be in order. Hey, maybe they'll ask me to write a review, HA!
This product was useless and dangerous besides. It's a big thumbs down!!
I think from now on we'll stick with the way we usually make them, check out my entry from last summer over at Our Krazy Kitchen!

It's been a long time

I wrote the title for this entry and suddenly have the old Led Zeppelin song stuck in my head, you remember it don't you - Been a long time since I rock and rolled ...I think that song is on Cadillac commercials now. I think I even heard it in an elevator once - I am getting old.
Anyway, this has nothing to do with music but it has "been a long time" since I've played along on Shadow Shot Sunday or Mellow Yellow Monday - today is a two-fer.
This neat drawing is a piece of art work from one of the student at the high school where I work. Really look at this - do you see how the whole thing is made out of pencils? Is that cool or what?! This is a project one of my favorite art teachers does ever year, the results are always so amazing!
